Bacon and Kale

You will need:
1-2 strips uncured bacon ($5 a pack)
1 package of uncured Canadian bacon ($5)
1 bag frozen Kale ($5)
1 bag of sweet potato fries (prepare according to instructions) ($5)

The saltiness of the Canadian bacon really balances out the slightly bitter taste of the kale. It goes well together. Add oven-baked sweet potato fries for a hint of sweetness and a few added carbs. My daughter isn’t a fan of kale. However, she did eat the Canadian bacon and the fries.

Fry two strips of bacon and Canadian bacon in a large skillet. Remove bacon once it is done to desired crispiness (You will need to warm the Canadian bacon up again prior to serving). Place the frozen kale in the pan with the bacon drippings. Place lid on pan (stir kale every 1-2 minutes). When kale is done to desired tenderness (5-10minutes), remove from pan, crumble the bacon strips, and stir in to the kale. Serve with the Canadian bacon and sweet potato fries. Enjoy!
